Beneath the maple leaves that cover this queso from Northern Spain is a plucky mixed milk blue that has plenty of spice and buttery richness. Made by the Alonso brothers, Tomas and Javier, for more than 30 years in the Picos de Europa mountains in Castilla-León, the cheese has a sticky rind and salty tang with sweet, meadowy notes.
